Childhood Memories In Family Restaurants

As I have grown older, I have realized that I look towards the future with more interest than my younger years and equally look back on my childhood with an ever increasing fondness. What I have found in my ruminations of my past is that many of my fondest memories actually occur in family restaurants with my parents and my sister.

I grew up in a time when it wasn't feasible to eat out all the time and visiting pretty much any of the family restaurants was considered a special occasion. I also grew up in a town with just over a thousand people. That meant that there weren't very many options in town. Sure, there were a couple of family friendly restaurants in the area, but absolutely no fast food joints. That meant that the only time my family ever went to these types of restaurant was when we went out of town.

As I recall, there were a lot of times that we needed to go out of town. Every couple of months, we made a two hour trip to a bigger city to stock up at the grocery store with far better prices than our local place. My favorite was being able to go to the mall where they had two different bookstores. I would spend as much time as I could looking at all the geeky role playing game books even though I didn't know anyone that played those games back home. It was the same with the different card games, but at least with those I knew a couple people that played those. Other than picking up a book from the bookstores, my favorite thing that we did was when we went to any number of the family restaurants. At the time, I felt that the food was somehow better than what we ate at home. Maybe it was the fact that we didn't have to make it ourselves that made the difference or the fact that there were appetizers and we never really had those at home.

One of my earliest memories is from a family restaurant that had those little plastic swords and I was trying to spear a crouton with it. The sword snapped, the crouton went flying one direction and the plastic blade went the other. I was left with the handle in my grasp. Halfway across the family restaurant we heard a lady exclaim, "Hey!" I looked over and saw her fishing around in her ridiculously large coif. I'm guessing it was the blade that got her. When she started looking around, we all snapped our attention back to our plates like nothing had happened, though we were all stifling our giggles.

There are many other fond memories that I have of other visits to family restaurants, but that is by far the most entertaining and perhaps a bit embarrassing. I still am under the assumption that no one but my family are aware of what happened that day at that family restaurant.

Chicken Noodle Soup is Easy

I have memories of my grandmother's homemade chicken and dumplings, and to this day, I've never had any that come close. Unfortunately, I don't have that recipe, but I've come up with a chicken noodle soup recipe that my kids love.

It's really not that difficult to make great tasting Chicken and Noodle Soup. Really! With the convenience of using a supermarket roasted chicken, you can get incredible flavor without starting from scratch.

When I started testing recipes, I looked through all my conventional cookbooks, gourmet cookbooks, online, etc. All the recipes I found seemed to lack the flavor I was looking for - you know, that great 'chickeny' depth of homemade chicken soup? So, I started looking in those cookbooks from churches and women's organizations.

Although I didn't find the exact recipe there, I did have some thoughts that led to my current method. I use a noodle recipe from a very sweet lady who goes to my church, Delores Koster. Her soup recipe is in the St. Francis Xavier, Carbondale, Illinois Cookbook.

The struggle I was having lied in making the stock/broth/base for the soup. That's when I decided there had to be a better, easier, faster way to get the flavor I wanted without waiting for a whoe chicken, vegetables and some seasonings to figure out how to marry together appropriately.

One night after my daughter's basketball game, we stopped to get a rotisserie chicken and the grocery store for dinner. My family only likes the white meat, so we have part of the chicken left over. Rather than tossing it, because no one liked the dark meat, I froze the whole thing until I could figure out how to use up the remaining chicken.

My son had been asking for homemade chicken and noodles, and that's when I decided to give it a try. I added what was left of the rotisserie chicken into water with some vegetables and spices to make the base for the soup. After a couple of hours of simmering on the stove - and it smelled great - I strained the mixture and boned what was left of the chicken. Ironically, my kids don't really like a lot of chicken in their soup, so this idea works out great for us. And, for some reason, they eat the dark meat in this soup.

I add the noodles and let it simmer for at least an hour or two. Usually, I have towater prior to adding the noodles. The result is really good. It has become one of those meals that everyone looks forward to, and the kids always ask for when they don't feel well. I guess that's the true test of chicken soup, right? I hope you enjoy it, too!

By the way, feel free to add new carrots or whatever other kind of vegetables you would like to this soup. My kids prefer to have a bowl of steamed broccolli and cauliflower that they can dip in the broth, so I don't add anything but noodles to the strained broth for us.

Chaos and Calm Exploring Morocco's Cities

Morocco: a land of golden sands with cities rising out of the shimmering heat greeting the desert traveller with welcome shade and rest. The rich history of Morocco is rivalled only by the fascinating variety of cultures that have made and continue to make their mark on this country. With centuries of history contained within the thick walls of its ancient medinas and mosques, Morocco has something to offer every adventurous explorer.
Today I am going to explore two cities, Marrakech and Essaouira, which epitomise Moroccan culture for me. Ill let you in on the must-see destinations along with some experiences you shouldnt miss out on.

Essaouira

A more laid-back example of Moroccan culture, the coastal city of Essaouira is popular amongst lovers of sun, sea, sand and surf. Sometimes overlooked by visitors to the country, the city is an important site of Moroccan culture with a rich history of its own. Fans of the renowned television series Game of Thrones might just recognise Essaouiras ancient architecture.

Visit

Essaouira is best experienced on foot. Take your time wandering around the city and soaking up the atmosphere.

The Ramparts: The ramparts of the city are its iconic feature today and have been for centuries. Having played their role in defending the port from invaders, they now offer the visitor a delightful view of the city and the bay. The Souks: Wherever Moroccans gather, you will find a souk. These bustling markets selling everything from tourist tack to delicious local foods are at the heart of Moroccan culture. Stroll around one of Essaouiras busy souks and keep your eye out for artisan crafts and exotic spices. Sidi Mohammed ben Abdallah Museum: This excellent museum recounts Essaouiras past through ancient jewellery, pottery and other fascinating relics. The museum is housed in a lovely nineteenth-century building built around a traditional open courtyard.

Marrakech

Whether youre visiting for the first or the fiftieth time, Marrakech is a magical place. The chaos of the city is equally apparent in the shining modern Gueliz area and the dusty Old Town. Though exciting, the streets of Marrakech can be a confusing place, so keep a map on you and watch out for the traffic!

Its hard to pick favourites in Marrakech as this is the city which keeps on giving. However, these are my must-see moments for first time visitors.

Koutoubia Mosque: A lovely example of Moroccan culture, this mosque dates from the twelfth-century and is a beautiful instance of Moorish design. Jemaa el-Fna: This large, open square is where everything happens in Marrakech. From local cuisine to henna, artisan crafts to dancing monkeys and snake charmers, you could spend all day just watching the world pass by here. In the heat of the summer months the square really comes alive as dusk falls. Jardin Majorelle: This peaceful garden is a slice of tranquillity in a city of movement. It was designed by a French painter as a calm oasis of colour and nature. With over 300 plant species nestled among Art Deco design and Moorish architecture, this is a truly special garden.

Commercial carp feeds, are a useful starting point as a guide to making your own nutritional and very effective homemade boilies.

Ive analyzed the ingredients of commercial high protein carp feeds, to show you the feeds ingredients and nutritional values. This information provides a practical easy guide to designing and making balanced profile food carp baits, and a clearer understanding of a carp bait ingredient and components:

Wheat meal: (Binder) 70 % Carbohydrate, this has a very digestible protein content of 14 %, essential amino acids, trace elements, vitamins E, etc.

Fishmeal: The bulk high protein provision; providing 65 to 86 % of the full carp dietary protein requirements with essential amino acids and essential fatty acids (Oils,) also.

(Often milk derivatives such as casein, sodium or calcium caseinate, and lactalbumin are used to provide high quality proteins in carp baits and even beef gelatin are all used, frequently with fish and shellfish meals in carp baits.

Maize Meal: (Binder) 80 % Carbohydrate content. Protein provided: In parts 8 % to 19 %. It also provides 8 of 10 carp requirement essential amino acids, minerals, traces etc.

Canola: (Oilseed rape meal.) This provides oils high in omega 3 essential fatty acids, and is lower in saturated fats than any other oil, containing more cholesterol balancing monosaturated fats, than any other oil except olive oil. It is also an excellent energy source. Carp baits need an excellent energy source.

Soybean meal: (Binder.) This meal provides 45 % carbohydrate, 45 % protein, 10 % fat, also 0.6 % phosphorus. (A carp essential mineral.) Soya is often used with semolina in economical low protein carp baits.

Amino acids: For a balanced amino acid profile. Brilliant carp attractors in their own right and used extensively in modern commercial carp baits!

Salt: Sodium chloride is essential for life, especially in blood and cell functioning, digestive juice, highly regulated in the body. An amazing carp feeding trigger!

Vitamins: carp essentials are especially C, B6, B12, A, D, E, thiamine, riboflavin, niacin, folate (B9), pantothenic Acid.

Immune stimulant: unknown, but spice oil extracts could play this role in carp baits.

Prebiotics: Unknown. However garlic and onion with the active component s-allyccysteine plus others, work very well in carp baits. For carp health and attraction these are brilliant carp additives in both oil and granular form! Bee propolis is also used in commercial carp feeds for this purpose.

Palatability enhancer: Unknown, but yeast extract is a very common and effective and nutritional taste enhancer. Many taste enhancers and flavours have evolved especially for carp fishing.

Colourant: Unknown, but a carp attractive sweetener like caramel is probably used. Edible dyes of any colour, even day -glo are available today, for use in carp bait making!

Spirulina: (Soluble Blue-green algae.) - Very healthy! Protein content is 62 %, fats 7 % (mainly Gamma-linolenic acids.) It stimulates the immune system with very high levels of beta-carotene (4 Milligrams per gram) plus other carotenes with important antioxidant effects. It provides polysaccharides which also have antioxidant effects too. Carp essential vitamins provided are: B12, thiamin, riboflavin, iron, and zinc. Spirulina is a very nutritious fish meal replacement or addition to your carp bait!)

Importantly, the overall contents revealed for bait making purposes are:

Total Protein: 38%. Carbohydrate: 62%. Fat: (Not less than 7 % within the ingredients. Phosphates: (Not less than) 0.7 %. Calcium: (Not more than) 0.3 %.

Feeds for use in water temperatures under 55 Fahrenheit or 13 Degree Celsius:

Total protein content: 30 % Added rice, peas and wheat germ for easy, digestible energy Wheat germ: Protein content: 28 %. (A very easy to digest protein.) Also provided are: 10 % fats (polyunsaturates,) vitamins B1, B9, niacin and minerals traces, selenium and zinc. Other winter formula feeds had a protein content of 28 %, and also addition of wheat germ with a reduced fish meal content so reducing the proteins and fat source.

The cold water bait could based on these examples consist of: Total protein content: 29 %.

Carbohydrate type food content: 71 %. (Including additional soluble fiber for increased digestible energy.)

These ratios have proven effective in carp baits in so many catches in so many differently designed carp baits over the years, that you wont go far wrong with them!

Hypertension is a health condition that is not to be taken lightly. Complications attributed to having hypertension poses significant health risks to a person. A widely publicized report has claimed that antioxidants are harmful and fail to provide health benefits. Unfortunately the report only focused on a few antioxidant vitamin supplements such as Vitamin A,C,E and beta-carotene. This skewed report has ignored the fact that countless studies have shown that many other non-vitamin food based antioxidants are healthy and provide protection against cancer, heart disease, Alzheimer's disease, diabetes and other degenerative diseases.

The review appears in a report of The Cochrane Library, a publication of The Cochrane Collaboration, an international organization that evaluates medical research.

Their meta-analysis of 67 randomized studies found that supplemental antioxidant vitamins do not reduce mortality. The review combined evidence from more than 200,000 people and found that, on average, those individuals who took supplements such as vitamin A, beta-carotene and vitamin E actually died younger than those who did not take these supplements.

"The harmful effects of antioxidant supplements are not confined to vitamin A," said review co-author Christian Gluud, M.D. "Our analyses also demonstrate rather convincingly that beta-carotene and vitamin E lead to increased mortality compared to placebo."

Are the conclusions reached by this report true and accurate? In terms of the specific vitamins studied in the survey, the review is essentially correct. In respect of antioxidants in general it is totally incorrect. The reason is that hundreds of dietary antioxidants other than vitamin A, E and beta-carotene are to be found in our diets.

As it only focuses on a few antioxidant supplements this report further increases common misconceptions regarding antioxidants and their effect on our health. Most of the clinical trials that the review covered involved only the antioxidant vitamins, A,C and E and beta-carotene. The review should have stated that it was these specific supplements that they were evaluating and not antioxidants in general. As important as these vitamins are to our health they are not the only antioxidants that our bodies require to sustain optimum health. And taking large doses of any of them could quite feasibly lead to health problems.

However countless scientific studies have shown that polyphenol flavonoids and other plant based antioxidant compounds definitely protect us against cancer, heart disease, Alzheimer's disease, diabetes and other degenerative diseases. These non-vitamin antioxidant compounds are found primarily in fruit, vegetables and spices and are not harmful to our health.

To appreciate fully why the report is irrelevant in respect of antioxidants in general we need to understand the role antioxidants play.

An antioxidant is a substance which, through being oxidized itself, protects other chemicals and substances from oxidation. As a result of this property, antioxidants provide protection against the often highly damaging oxidative processes in our bodies that are caused and perpetuated by free radicals.

Because of their destructive properties, free radicals can cause havoc in our bodies and they have been implicated in a wide range of diseases such as cancer, diabetes, Alzheimer's disease, inflammatory disorders and a number of other pathological processes.

Like most substances found naturally in the body, free radicals are toxic only when they exceed a certain threshold. In certain circumstances, the body actually needs free radicals to fight infection, and there is evidence that too much of one type of antioxidant can be harmful if it eliminates all of a useful free-radical species. Typically, however, an excess - rather than a shortage - of free radicals is by far the greater problem facing our bodies.

An incorrect and potentially damaging perception is that taking one or two "strong" antioxidants will provide protection against free radical damage. Measured against laboratory standards, one antioxidant may indeed prove more effective - or powerful - than another, but this is only true under certain conditions. No one antioxidant neutralizes all free-radical species no matter how potent that compound is. That is the most important reason why we should not rely on high doses of a few antioxidants like vitamin A, C, E and beta-carotene to deal with the multitude of free radicals that we are exposed to. We need an array of antioxidants to neutralize them all.

Beyond a certain threshold, any beneficial substance can become harmful. Antioxidants are no exception, and yet they are often consumed in dangerously high quantities. Vitamin C, for example, is an essential vitamin and a valuable antioxidant. Taken in large does, however, it has been found to damage DNA, increasing susceptibility to cancer. Some antioxidants need the protection and synergistic relationships that can only be provided by other antioxidants. Rather than taking an isolated extract of any one antioxidant, however "powerful", we should be ingesting a wide range of these vital compounds. The best way to ensure we do this is by eating a variety of antioxidant-rich foods such as spices, fruits and vegetables.

As a rule of thumb we should not be taking individual vitamin antioxidants in quantities much above the standard recommended daily allowances. Instead we should be taking foods or other supplements rich in a wide variety of antioxidants. By doing this we will avoid damaging our bodies with high doses of a few antioxidant vitamins and instead provide them with effective protection against diseases associated with free radical damage and aging.

I'll be honest - I'm a little intimidated by Southern cuisine. Each area of the South has its own unique flavors and aromas, ingredients and methods that set it apart from the others. And being but a humble suburban Northerner, the idea of delving into the goings on of the Southern kitchen is all out frightening.

However, being the go-getter that I am, I've decided to tackle southern cuisine one region at a time - and where better to start than Louisiana? A state with a fascinatingly rich culture and history, there are two main genres of cooking that have emerged: Creole and Cajun. And although the mainstream media have commercialized the idea of Cajun to mean anything that is spicy (i.e. McDonald's Spicy Cajun McChicken), these two cuisines each have their own methods, ingredients and histories that produce much more complex flavors than simply "spicy."

Creole

History
One of the main distinctions between Creole and Cajun cuisine is the origin of the people who created them. Creole cuisine was born from European aristocrats who moved to New Orleans in the late 1600s. Melding lifestyles as well as culinary influences, a new culture was born. These people became the upper-class of the city and their descendants can still be found in the French Quarter of New Orleans today.

The word Creole comes from the Spanish word criallo meaning a mixture of cultures or colors (as in the word Crayola) and from the Latin creare meaning to create (as in a new race). The mix of cultures included Native Americans, French, Spanish, English, African American, German and Italian.

Cuisine
Because the Creole were people of privilege, the ingredients in their cuisine reflect a more sophisticated and expensive palate. The veritable melting pot that was merging in New Orleans during the end of the 17th Century created a fusion of foods. Dishes that we now recognize to be uniquely Creole are each contributions from different European cultures and truly illustrate the evolution of the dishes.

From the French bouillabaisse came gumbo
From the Spanish paella came jambalaya
German influence brought sausage and dairy
Italians introduced ideas of pastry and ice cream
West Indian and Haitian techniques of braising and slow cooking influenced the preparation of gumbo
Native Americans added spices and flavoring of corn, bay leaves and fil powder
African Americans introduced okra to the dishes

Cajun

History
The history of the Cajun people is almost the exact opposite of the Creole, whose lives were filled with privilege (and private chefs). The people who became known as Cajuns were exiled French refugees who immigrated to south Louisiana from Acadia, Nova Scotia in the 18th Century. Because they were immigrants forced from their homeland, their cuisine - and their livelihood - depended on their survival. The Acadians (who were later known as Cajuns) learned to live off the land by incorporating fish, shellfish and wild game into their diets.

Cuisine
Born in the bayous and swamplands of Louisiana, Cajun cuisine is one of natural resources, efficiency and survival. The phrase "table in the wilderness" is often used when referring to original Cajun cooking because the Acadians had to adapt to the indigenous foods of the area. A common misconception is that Cajun food is always spicy. On the contrary, Cajun food is well-seasoned, but did not gain a reputation for heat until the 1970s when the "blackening" technique became popular. Cajun cuisine originated from three major influences:

Natural Resources - Native Americans taught the Acadian immigrants to utilize their resources by cooking with products found in swamps, bayous, lakes, rivers and woods.
One Pot Meals - In an effort to conserve energy and resources, meals that could be cooked in a single pot made everyone's life easier. Dishes like jambalaya, grillads, stews, fricassees and gumbos all lent themselves to this form of preparation.
German Sausages - Another outside influence, Cajuns quickly learned to use the sausage to add flavor and spice to their cooking. Sausages like andouille (pronounced en-DOO- wee), smoked sausage, boudin and chaudin are all found in Cajun cooking.

Organic spices and herbs are grown without using chemicals and unnatural fertilizers. The benefits should be obvious. What we avoid, in terms of ingesting unknown chemicals that may cause cancer, heart disease and other health related concerns, protects us. To be certified organic a grower must grow on land that has not had synthetic fertilizers, growth regulators, insecticides, or herbicides applied to it for a minimum of three years. If not grown organic, you just dont know what youre getting.

The fact is that organic herbs and spices just taste better. Standards for processing, storage, packaging and shipping of these products almost assure that they are fresher and more favorable. Our partner and supplier date stamps their packaging so you know what you are buying is not something that has out lived its shelf life. The benefit to you, as a consumer, is that you dont have to guess about the quality and freshness of the product you buy.

If you care about Mother Earth then you probably already buy organic and if you dont it may be reason enough to consider the move. Because organically grown foods, herbs and spices dont add pesticides, fertilizers and other dangerous chemicals to the environment the natural balance of the land is maintained. Streams, rivers, lakes and our underground water supplies have less risk of becoming polluted. Bottom line, we all benefit as good stewards of the land, eat well and stay healthy.

If you are a tea drinker, you may enjoy growing your own tea plant. Today's tea drinkers get their tea from local shops, in tea bags or in canisters. You may find it rewarding to drink your own freshly picked, dried, and brewed tea leaves.

Camellia sinensis is the Latin name for the tea plant that provides the world with green, black, and oolong varieties of tea. Tea surpasses even coffee as the world's favorite infused water drink. To be properly called "tea", the main ingredient needs to be leaves from the Camellia sinensis plant, a native of east Asia.

The origin of tea is buried under many layers of history and legend. Generally, the Chinese are considered to have been the first drinkers of tea and they credit Shennong, a legendary emperor, with its discovery. India and Japan claim that Bodhidharma, a monk of India, discovered the tea that they cultivate. Tea, as we know it in British culture, was not imported until the 1600s. Europeans migrating to the United States brought their tea with them, which has spawned a derivative mainly popular in the southern United States - sweetened iced tea.

You may be able to get seeds or plants at your local nursery, but if you can't find any, you can always order seeds online. As the tea grows, you will have to either repot the plant or thin out the roots if you want to keep the plant in the same pot. Potted tea grows best in rooms between 65 to 86 degrees Fahrenheit. Growth will slow or stop at much below 65 degrees, so warm, sunny rooms or greenhouses are best for tea growth.

Growing tea is only the first step. In order to enjoy your tea, you need to know when and how to pick and dry the leaves. Tea plants take some time to grow to the point where you can harvest their leaves. For all teas, you will want to pick the youngest leaves and buds on the tea plant.

For green tea, let them dry in the shade for a few hours. Steam them on the stove like vegetables for about 1 minute. Then, spread on a baking sheet in the oven at 250F for about 20 minutes.

For oolong tea, let them wilt in the sun for about 45 minutes. Then, bring them inside to sit at room temperature for a few hours (make sure you stir them up every hour to help them along). When their edges turn red, pop them into the oven for 20 minutes at 250F.

For black tea, crush the leaves with your hands until they turn dark red. Then you want to spread them out on a tray for a couple of days in a cool location. Finally, you complete the drying process with 20 minutes in a 250F oven.

All teas should be kept in an air-tight container. For different tastes, mix herbs, spices or flowers in with the tea leaves. Enjoy!

While doing research into my own blood sugar problems, I discovered an important report from the American Diabetes Association. Since reading the report and stopping the juices a month ago, I have had NO low blood sugar

The report, FRUIT JUICE DRINKS TIED TO DIABETES: American Diabetes Association Ties Fruit Juices to Diabetes was published in NUTRITION NEWS, Issue 105, July 24, 2008.

The report starts with the following:

Surprising new research has shown that fruit juice drinks greatly increase the risk of type 2 diabetes."

"Stay away from fruit juice drinks" was the message delivered in relation to the study published by the American Diabetes Association (ADA).

The American Diabetes Association (ADA) published the results of a study of over 4,500 people to help determine factors associated with the risk of diabetes. Researchers found that: "An additional daily serving of fruit juice increased the likelihood of developing diabetes by 18 percent"

Fruits in a liquid, juiced state have very different obesity and diabetic risk factors than actual raw fruit. Juicing fruits completely changes the nature of a fruit, altering its metabolic actions. Low Glycemic raw fruits may be consumed in moderation, but juiced fruits should be avoided.

This is especially true in children, as adipose tissue fat cells can be triggered to increase in size and amount during childhood. Fruit juices send a message to human fat cells to become larger and more abundant, leading to higher incidence of obesity and diabetes.

Triggering adipose tissue fat cells in childhood is a sure way to create an obese and/or diabetic adult, as these types of fat cells cannot be removed once they are created.
